Plus, you can save a piece of this yummy flaky crostata for the after treats. Here’s the no-sugar Thanksgiving dessert recipe:
- Wheat flour- half cup
- All-purpose flour- half cup
- Kosher salt- quarter teaspoon
- Unsalted butter- 10 tbsps
- 2 large eggs and 1 egg yolk
- Cold milk- 2 tbsps
- Medjool dates- 2
- Baking soda- 1 pinch
- Ripe pear- ¾ cup
- Water- 3 tbsps
- Ground cinnamon- half teaspoon
- Ginger- half teaspoon
- Honey- 1 tbsp
- Almond flour- 6 tbsps
- Vanilla extract- 2 teaspoons
The first step is to prepare the dough by mixing the all-purpose and wheat flour in a bowl. Add salt, butter(8tbsps), egg yolk, and milk. Combine all the ingredients well and make a dough with hands instead of using a blender. Wrap the dough into a plastic sheet and put it in the refrigerator for an hour.
The next step is to prepare the pastry cream. Soak the dates in hot water and add a pinch of baking soda into the bowl. Let the dates be soaked for 15 minutes. Take out the dates and mash them using a spoon.
Take a pan or skillet and add cinnamon, ginger, cubed pears, date paste, and season with salt. Cook until all the liquid is drained out. Let the mixture cool.
To another bowl, add eggs, honey, butter, and vanilla. Use an electric mixer to make a fluffy paste. Add the flour and again mix it. To this flour and egg mixture, add the cooked pear mixture and again give a gentle mix.
Take out the pastry dough and let it cool at room temperature. Dust the dough with flour and roll it on the pastry board. Flat the ball into a 13-14 inch sheet. Remove the extra flour. Pour a spoon of almond cream at the center and spread it evenly leaving the borders.
Place the honey and lemon coated pear slices on the dough. Secure the dough edges by folding them. Transfer the dough to a baking sheet covered with parchment paper and refrigerate for one day. Bake this at 350 degrees F in a preheated oven. Brush with egg white before putting the dough in the oven. Garnish with almonds and bake for 45 minutes.
Cool the pastry and slice it into pieces to enjoy. Each slice gives you only 272 calories and lots of nutrients like Vitamin C, calcium, potassium, carbs, dietary fiber, and fat. Too healthy, isn’t it?
